Khao Soi is a rich, creamy, and mildly spicy Northern Thai coconut curry noodle soup. A signature dish of the region, it features both soft, steamed egg noodles submerged in the flavorful broth and a unique topping of crispy, deep-fried egg noodles, providing a distinct textural contrast. It is served with a chicken thigh & drumstick and garnished with pickled mustard greens, fried onions, lime, and cilantro.
